SKIRT STEAK WITH SMOKED CAULIFLOWER PUREE AND GREEN BEANS

Ingredients
  • 700g Manning Valley Naturally Skirt steak
  • sea salt flakes and freshly-ground black pepper
  • 1 Tbsp Luchito sauce (charred chipotle)
  • ¼ cup extra virgin olive oil
  • half head cauliflower
  • ½ tsp ground cumin seeds
  • apple wood chips
  • 300g green beans, trimmed
  • ½ fennel pollen
Method
  • Season steak generously with salt and pepper, then rub with Luchito sauce. Set aside for 10 minutes.
  • Steam the cauliflower until tender. Puree with cumin, season with salt and smoke it with the apple wood chips.
  • Drizzle steak with half the oil, then set on a hot BBQ grill for 3 minutes each side until medium rare.
  • Steam the beans until just tender. Dress with the remaining oil. Sprinkle with salt and scatter with fennel pollen. Serve with the cauliflower puree and carved steak.
